In vietnamese, ” Hành Hương, Hành Tía, Hành Ta, or Hành tím” is one of the most common spices using in vietnamese dishes. It grows in the north parts of vietnam;  having a characteristic, intense flavor, used to increase the taste and quality of food. Shallot is normally processed as dried form for long-usage purpose in Food Manufacturing; after dehydrating it appears with a range of color from ivory to yellow, included some parts of pink and purple colors.
